"EASY PEASY CAKE AND UTTERLY DELICIOUS! Didn't think for a moment that it would be a patch on a Mr Kipling, but it tasted even better! I made 3 in a week for a friends and family (and I made them gluten/wheat-free too and they were just as good) *****"

"Just made this and it was a really nice light meal (or side dish). I added chopped garlic to the dressing, which really gave an extra kick and used parsely instead of corriander as I don't like that. Was very easy (but needed to cook the aubergine for more than the recommended time)."
