"Cooking it for lunch again today! Absolutely family favourite and so easy! I can also throw in any veg that needs using up - leeks, mushrooms, sweet potatoes etc. I leave it all to cook slowly and it's ready with no fuss! Serve with crusty bread to mop up th juices! "

"Rick Stein recommends the veg are cut up small after cooking and then cooled - for better flavour... this way the flavours are not lost in cooking."

Cherry Bakewell cake

"Just made this cake this evening - it was so easy and turned out fantastic... I added an extra egg as I used value eggs which aren't so large. I also decorated the top with lots of glacé cherries as well as the almonds which gave it a 'real tea-time treat look'... I made it to take to work tomorrow but my eldest son saw it and asked if he could take half to work too.. then we just had a small slice each... it was so yummy!! Great cake for all occasions!!"

"Had lots of milk & cream left over from Chrstmas & decided to make rice pudding... put in microwave in a large bowl covered in cling film. cooked on medium for 20 minutes - stirring well after each 5 mins - came out absolutely perfect! Left on the side to cool - and added some more milk and stirred as rice had continued to absorb liquid... ok so you don't get the brown skin on top.. but it's a great way of making rice pudding very fast!"
