"I was so looking forward to trying this as it looks delish! My first attempt with filo pastry and was surprised how easy it is to use. I added olives and pine nuts too but made the mistake of using mozarella instead of feta cheese it just didn`t taste cheesy! I will definitely make this again and use either feta or a blue cheese to compliment the other flavours :o) "

"I love this soup, it is quick and easy to make and genuinely surprised me how delicious it tastes. . . Just added garlic to taste, sprinkled grated cheese on top and served with crusty bread! Definitely be making this again :o)"

Yummy scrummy carrot cake

"Wow what a delicious, moist cake and so easy to make, a huge success with the family. I tweaked it slightly reduced the oil to 125ml (I used extra virgin oil), as recommended by others, added 40g chopped walnuts and pineapple instead of raisins, extra 20g of grated carrot, for the topping I used cream cheese frosting with chopped walnuts! I always thought Carrot cake was difficult to make, wrong. . . will definitely be baking this again!"

"I love this recipe and have found the cake flavour improves when left over several days. Slight variation, I used 200g chopped dates a 50g chopped walnuts instead of dried berries then chopped walnuts for the topping, it was delicious. . ."

Peach Melba squares

"A slight variation to this recipe, try using tinned pineapple pieces, I am sure fresh could be used too if you prefer, with coconut! I already reduced the sugar by 50g on my first attempt but if using coconut reduce by a further 50g and add 50g coconut, sprinkle on top too prior to cooking, it is delicious, such a great dessert that you can serve warm or cold with cream/ice cream :o)"
