    Tomato, spinach & mascarpone gnocchi

    "I just tried this recipe and cooked it for my mum. we both absolutely loved it! we'd never tried gnocchi before and were pleasantly suprised! we used ricotta instead of mascarpone, and it was delicious! i will definately cook this again! "

    "I have just finished devouring this beauty, and that is exactly what it is...amazing! I have never tasted a lasagne that is on par with a real lasagne. i turned vegetarian three years ago and real lasagne was definately a dish i really missed, but this is just as good as the real thing! The creaminess of the ricotta and cheese throughout was lovely. i shall definately be making this again. I used wholewheat pasta and the weightwatchers parmesan and pesto pasta sauce as it was the only one in the cupboard and it worked really well! Although i did have a bit of trouble with precooking the lasagne sheets and had to make a second attempt until i managed to make them not stick together. "

    "I made this for my family a few weeks ago and it went down a treat! I even went back for seconds! I used half fat cream cheese to make it a little less sinly and used a few more biscuits to make sure the filling didn't leak through as well as adding more raspberries to the filling as it didn't seem to be enough, and i was right, as i actually felt after increasing the amount there still wasn't enough! (I love raspberries!) Next time i shall try it with blueberries i think :) "
