    Guinness pudding with Whisky cream

    Tested

"I loved this pudding! Possibly the best one I've ever made. Not too heavy, nice and moist, not too alcoholic. Maybe a tad less cloves next year, but that's all I'd change. It's seriously moreish, and lovely cold with cream or ice-cream the next day. "

"These really were easy! I added half a beaten egg to the mix - so it just about held together well enough to be rolled out. The pastry turned out really crumbly and yummy - a bit shortbreadish - and they went down a storm. I used a "finest" rum and raisin mincemeat which went really well with them. I'll definitely be making these next year - everyone ate them so there are none left!"

"Although I didn't have too many problems cooking the cake, or feeding it!, it did turn out rather denser and moister than I'd expected - I wouldn't call it a "lighter cake". The saffron definitely came through - so if you don't like saffron, don't make this one!"

"Made this for Christmas Day - surprise surprise. It worked out really well for the most part. The cider didn't really come through, but the turkey was moist and tender and very tasty. "

"I made this from the magazine - just for stuffing the turkey, not to make the rolls. I did have some left over which I made into a roll (minus bacon) and cooked to serve along ide the turkey. One note of warning - if you use it to stuff the turkey the berries leak juice, which can make you think that the turkey is not done, as pink juices leak out of the cavity - so check everywhere else instead - our turkey was actually done just fine as per the timings suggested. It was delicious stuffing - and was even better cold the next day!"
