    "Made this for my husbands 40th. Didn’t have any Tia Maria so used the rum/coffee mix suggested above. I think as a substitute for Tia Maria this worked pretty well. However, we weren’t over fond of the mascarpone frosting, next time I will just use a buttercream. Also made the coconut and lime cake pictured above it was delicious!"

    "Really fancied this when I saw it in the GF magazine, but I hate working with pastry! So I just made the filling in my pie dish to serve as a sponge with custard. Tasted really lovely but was difficult to get out the dish. Next time I am going to try it in a lined cake tin and cut it like a cake."

    "I made this pie using the 2 breasts leftover from a roast chicken the night before. I didn’t simmer it for the 30mins on the hob as my chicken was already cooked just let the sauce thicken for a few minutes. I also topped it with mashed potato instead of pastry and popped in the oven for about 40 minutes to heat through thoroughly. Might not look as good as the pastry topped pie but tasted delicious, great for a freezing January night "
