"I made this with a raspberry puree from home grown fruit.Really easy and very creamy. I'll try it again with other fruit."

"Really loved this recipe. Like carrot cake only better and made loads.Intended using the mixture for cupcakes but ran out of cases so ended up making about 12 cupcakes + a round cake (like half a victoria sponge).Iced the large cake with orange buttercream and froze most of the cupcakes.They froze really well and were almost as nice (and less guilt-inducing ) as the iced cake."

"THis was a fantastic recipe. I varied it a bit by using half Olivio instead of all butter to reduce the saturates and a bit of wholemeal self raising flour and it was still great.Rose like a dream. I think its the best sponge I've ever made and I'll definitely be keeping this recipe to use again."

"Very easy and quick. I added pine nuts as suggested. I did find it a bit salty so if I made it again I think I'd use slightly less feta.Was very tasty despite this!"
