Herby salmon & couscous parcels

"Really nice mid-week meal. I used plain wholemeal couscous and used veg stock and added a squeeze of lemon and a crushed clove of garlic. Herb-wise I had thyme, oregano & parsley in the garden and it worked well. The salmon took a little longer than stated but our fillets were quite thick. My 5 year old son loved the novelty of having "dinner in a bag"!"

"These are really tasty! We used chickpeas instead of mixed beans, and shallots instead of spring onions as they were growing in the garden! Also added a clove of garlic. Worked really well. Messy to make but worth it. Served them with an avocado & tomato salsa. Will definitely make again."

Cherry Bakewell cake

"Really lovely cake and a big hit with my nearly 5 year old and he has now requested it for his birthday cake in a couple of weeks time. If you like Bakewell Tart, you will love this! It was gone very quickly!"

"This is a really tasty soup, low in fat and calories but you wouldn't think so. The cumin and coriander really add flavour and warmth. I used half the amount of orange juice and made it up with stock as I was worried it would be too orangy, but I think I could've used more."
