"Having read up on the nutritional value of quinoa, I had bought a 25 lb bag from the internet and so was anxious to try it in a recipe. This one looked good and so I tried it tonight. I was not disappointed and it was a big hit with my family who thought the flavour was wonderful. I made it as per the recipe, changing nothing and would highly recommend. I will definitely be making this again."

"For those who found it lacked depth of flavour, try making it a day or 2 before eating. The flavour really improves with keeping. Also, I too added more spices, including curry powder. This really improved it. The rice was superb and so easy, with every grain separate, something I have strived for, but rarely achieved! This is an effortless curry with a great flavour and one which I will be using on a regular basis."

"I used beans soaked overnight instead of tins and added an onion which is standard for me! Also, I used water instead of stock and yet it still tasted wonderful. The result was more like soup than a casserole so served it with French bread. Great mid-week meal enjoyed by the whole family."
