"These were brilliant. We added around 50% more courgette like some of the other reviewers, which I'd definitely advise as they could be a bit greasy without the extra veg. Next time I might look at giving them a more distinctive flavour - maybe garlic, paprika or chilli flakes."

"Delicious cake. Next time I would add some chocolate chunks and cranberries to the sponge mix to give it a bit more texture. Very light and fluffy though. I would heed the warnings around adding the coffee. I mixed tablespoons of water and coffee but was just very careful to add a little at a time to the mascarpone and taste as I added - it is very easy to make it too bitter. You could add a little icing sugar to sweeten if the coffee flavour does get too intense. Overall with the taste of the sponge the sweetness of the chocolate did balance it out. Walnuts or pistachio nut would also work well : ) Good reliable and quick tasty recipe."

Catherine Berwick's Parsnip & maple syrup cake

"This was one of the best cakes I've ever made! Such a great recipe. One thing, I wanted to make this again for Christmas but wondered how long it would keep for? Does anyone know? The recipe says you can freeze the cooked sponges, but how long could this last after its compiled? Any tips much appreciated! :)"

Light & fluffy chocolate mocha cake

"Sorry to say this is a terrible recipe - actually think BBCGF should remove it from the site. Unfortunately I hadn't read through all of the reviews before buying all of the ingredients and starting to bake :( Despite making the various improvements mentioned here, I got the same inevitable results as other reviewers - it was very flat, bland and didn't really taste at all of coffee. Complete waste of time and ingredients - avoid!"

"This was delicious and very easy to make. I would definitely heed the warnings about adding the vanilla essence to the cream rather than the chocolate mixture to prevent it going grainy. One thing I did notice was that the next day everyone who had eaten it had quite bad indigestion. We thought it might have been because of a generally rich dinner party, but we ate a couple of left over slices the next evening and noticed the same thing the following day. Shame as this really put me off making this again. "
