"This is a lovely way to serve beetroot, but I found that the outer layer of the leeks came out a little chewy. The roasting really brings out the natural sweetness found in these particular vegetables, and the addition of balsamic vinegar really accentuates this. I served this as a side to roast pork loin and I think it would be a great side dish with roast beef as well."

"This is wonderful - juicy fruit topped by light, fluffy pastry. Since there is only the two of us, I judge hot desserts by how well they reheat and this dessert passes with flying colours. I look forward to next summer when plums are in season again, just so that I can make this dessert!"

Warm lentil salad with Serrano, chicken & rocket

    Tested

"We just loved this salad! It is perfect to serve on a hot summer day when one does not feel like cooking. I used prosciutto instead of serrano ham since the latter is very expensive where I live, and roasted some boneless chicken breasts, which I then sliced thinly. This will be part of our regular hot weather meal rotation."

"I made this with chicken sausages as I am on a low cholesterol diet and it was quite good. However, as another reviewer said, it took a while for the lentils to cook. I gave them 40 minutes and still found them a bit chewy. It is definitely a recipe to make when one has a lot of time to get the consistency of the lentils just right."

"I made this cake last night using frozen raspberries and it turned out great. I like that it can all be thrown together in the food processor. One less appliance to haul out as I use the food processor to chop the almonds, then add the rest of the ingredients. I will definitely make this delicious cake again!"
