    Baked salmon & aubergine cannelloni

"I agree, Laura - looks delicious but deadly for the waistline. I imagine the marscapone, parmesan and pesto push it over the calorie edge Makes a nice change from the usual ragu version though."

Spicy baby aubergine stew with coriander & mint

    Tested

"Looks delicious, but as with most veggie recipes, I wonder if such a small amount of protein for a main meal is enough. So the addition of chickpeas is a good idea @sw77!"

"PaperTigress - they're often used in Moroccon-style cooking but if you have a look at http://tinyurl.com/37yhgkt there are some more ideas. I think you are supposed to rinse the salt off before using, too. They're great in couscous and also casseroles."

Braised chicken with chorizo & butter beans

"I have a feeling that the calorie amount ought to be divided by two, as it's a recipe for two, and 500-ish calories sounds more correct. One for BBC Good food I think! I do think that chicken thighs are a brilliantly cheap but tasty cut and beat the rather dull breast cut hands down."
