Cheat's hot-cross buns

"I have made these making my own 'bread mix'. Just use 500g of strong white flour with a 7g sachet of yeast adding a pinch of salt if you wish then follow the recipe as stated. Having had limited success with piping crosses I just mark the cross with a knife and leave it as that!"

"My family don't like nuts in their fruit cakes so I tend just to leave them out, I don't usually bulk up the fruit content as I tend to think it makes the cakes a wee bit heavy. "

Chicken noodle soup

"Lovely way to use up the leftovers of a roast chicken. Use stock made from the carcus. Good, healthy warming food on a budget. If you haven't got noodles, spagetti or rice also works just watch timings as spagetti and rice take a bit longer to cook! "

Chorizo, new potato & haddock one-pot

"Vert tasty, there were too many spuds for us too but they were lovely reheated the second day! For those of us on a tight budget I used frozen fish which worked surprisingly well. Just need to be a bit careful with the timings to get the fish cooked through but not overdone. "
