"It's blatantly obvious why you need two rows of prosciutto. So that it will wrap around the beef entirely. Why did you even question which direction it went in? Surely it was clear that you stretched them out width ways in the direction of the fillet so that it would evenly cover it? I think this beef wellington is delicious and very easy (if a little time consuming to make). Made by anyone other than the previous Claire Richardson, who clearly has no common sense, then this is a real show stopper of a dish. "
