"I make this all the time but i cook the onions and potatoes together, and in much less oil. whip the eggs in a large bowl then tip in the potato/onion add spinach and stir pour back in pan and dot the top with goats cheese and cook as directed, Slide it on to serving plate."

"just made this for dinner and it was devine. I did not have fresh taragon but used dried and it was still lovely and the lemon juice was really nice. Very quick and easy will defo make again"

"i added a teaspoon of salt i think that is what is what is missing. I make a potato focaccia which is similar, and it is really nice to have with a salad."
