Creating your wedding cake

"I have been practicing the lemon and chocolate cakes using reduced quantities and they have turned out really well but my first attempt at a full size lemon cake was quite heavy/soggy so I need more practice - any ideas why pse? A few thoughts were: 1. I have bought a new Kitchen Aid mixer and maybe over mixed the cake 2. The oven temperature was not accurate - are the recipe temperatures given for a normal or fan oven/should I reduce the temperature for a fan oven? 3. Is it possible that I used too much 'lemon drizzle' as the two lemons produced more juice than I would normally expect? Any ideas would be welcome as I need a few more attempts before the big day Thanks"
