- My last supper would be... Fish, chips and mushy peas!
- My fool proof recipe is... Italian chicken with mozzerella
- My favourite utensil is... the Garlic Twist that I bought at the Good Food Show. It chops up garlic really well
- If I am not cooking I'm... walking the mountains where I live
- The best meal I've eaten was... at a restaurant in my village where I had homemade lobster bisque (i didn't want it to finish ) fish platter and then a delicious homemade creme brule to finish off

"enjoyed this dish very much, cooking the salmon in the microwave keeps it lovely & moist. As I had half a cabbage and some sprouts to use up I sliced the cabbage finely and added sliced sprouts to it, which made an interesting alternative to the leeks. I will definitely make it again. "

"I have made this a few times now and enjoy it every time. The second time I made it I substituted ricotta for mascarpone, it was lovely and creamy, last week I made it again and fried some chopped bacon and added that to the courgette mixture."
