Parsnip, cranberry & chestnut loaf

" I did a half portion test which was quite easy to prepare. Made it the day before as suggested in the recipe and baked it next day. It didn't hold its shape well and partly collapsed so didn't look like the recipe picture. Tasted good however so next time - for my siter in law's Christmas Day lunch I will adapt it by adding more egg to the mixture and maybe some mushrooms in the nut mixture to give extra moisture. Apart from that- another vege winner - cheers"

"I agree with Pippifer - looks great but keeping all the elements warm until it reaches the table was a problem for me too. Am making it again for my sister in law's Christmas Eve main course but this time I will prep everything and then really heat everything, including the plate, in the microwave."

Roast duck legs with red wine sauce

" A "Must Try" recipe. Easily doubled etc - no last minute effort required. Done it various times - varied the amount of wine to give a thicker sauce other than that left everything the same"

Boxty with bacon, eggs & tomatoes

" Made a test batch - tasted good but were very soft. Is this how they should be. The photograph in the magazine shows them looking firmer and more well done than mine turned out. I will remake them as I didn't have the buttermilk this time, which I think will just give them the edge they need. I would appreciate comments on the texture if anyone reads this"
