    Tomato, spinach & mascarpone gnocchi

    "beautiful flavours but the marscapone spoiled it a bit, as it didn't melt into the dish and was really very heavy. In future i would probably use something a bit lighter such as mozerella (already suggested), ricotta or Quark. Presentation was a bit of a let down too, as soon as it was dished up its appearence became a bit non-appetising! "

    "really really tasty recipe, despite the relatively small number of ingredients. I made this with single layers of uncooked dry pasta sheets, which absorbed excess water from hte courgettes, and i also used quark instead of ricotta as i personally find it lighter. I'm sure this will become a regular weekday meal for me - taking the leftovers to work tomorrow for lunch! Tip: I find leaving my lasagne for 5-10mins after taking it out of the oven and before cutting it. This enables any excess juices to be reabsorbed and stops it collapsing on cutting. :)"

    "Made this for my ill [chinese] boyfriend, but used dried sliced shitake mushrooms instead of fresh. Also added a few drops of sesame oil to the bowl before serving. Being Veggie, couldn't taste it myself but my bf loved it and it made the house smell great! Sure i will be making this everytime he gets a cold... Thought it would possibly be a good way to use up excess Xmas turkey too."

    "This recipe was excellent. I used a leftover carton of pilau rice from a supermarket 'takeaway' meal deal, and just omitted the stock. I also used fresh spinach, which i just added straight to the pan. As a vegetarian i am always on the lookout for tasty, nutritious and easy meals and this will definitely be a keeper. I served it with mango chutney and yogurt, but it would also serve as a good side dish to a curry. Next time i will try it with the uncooked rice."

    "These muffins were very good, and i found them more than sweet enough. Only one criticism, and that is using over-ripe bananas makes the muffins come out with a green tinge (presumably because the bananas blacken on cooking) and seems to prevent them rising as far as a muffin should. I used raspberries instead of blueberries. might try date and walnut next time!"
