"I love this recipe - it is so simple, easy to make and deliciously fresh and light. I only use 1 TBSP of olive oil and 1 tsp butter. I tend to serve it with plain baby new potatoes and french beans rather than rice which soaks up the sauce"

"I find this a very tasty recipe that is also delicious cold for packed lunch the next day. I tend to make the above quantity to serve 3 plus a smaller portion into my packed lunch. I only use 1 TBSP of olive oil which I find quite sufficient and have also made it just wilting lettuce/ salad leaves rather than spinach and this works well too."

"It hardly seems worth adding another positive comment to what is clearly a great hit but just wanted to say that as I try to reduce fat content in many recpiies I have come to the tested belief that this recipe works well using half a TBSP of olive oil with additional fry light to saute the onions and garlic. I tend to use 2 TBSP of Marscapone mixed with 2 TBSP of fat free fromage frais. This has produced a version accepted by all the family! (have also tried using quark to replace some of the Marscapone but we prefer the FFFF)."

"Made this tonight and very tasty. Baked fish in foil in oven whilst making sauce. used low fat salami instead of chorizo and was still very tasty. served with small new potatoes and mixed oven roasted veg. Too much sauce for 2 of us so have saved the left over sauce and will pour over a chicken breast for lunch tomorrow. Will make again. "

"Made this as per the recipe apart from being spare with the cinnamon as we sometimes find too much a little overpowering. Absoluely loved by all and will make again wothout doubt. Easy too - always a plus!"
