"Someone may have already commented - I haven't read them all - but has anyone checked the loaf tin size? 8x21cm is too small for this quantity of mixture - I used a larger one. Nice recipe though - like others I used 2 lemons - lovely moist cake that certainly didn't last the 3/4 days it's supposed to keep!"

"Jane - thank you for that - I'll give it a go. I have been making jams and marmalades for years, but usually steer clear of strawberry jam - partly because of the expense and partly because I have never had much success in getting it to set. I tried this method, but unfortunately fared no better - wonderful colour and taste but it ran up our arms when we tried to eat our toast! So I resorted to microwaving small batches the next day, but fear that it will have lost its flavour and it certainly looks different."

"I am used to making fruit cakes in the traditional way and so was interested to see how this turned out - on the face of it, self-raising flour, 3 eggs and baking powder seems excessive - and the mixture did look curdled - but the result is superb! Very moist - yes a bit crumbly - but it tastes wonderful and like many others, I don't think it needs icing. It took much longer than 50-60 minutes though - more like 1hr 45 mins. "

"A smashing recipe - I thought the leeks added colour and flavour - a few mushrooms are good too. I agree with Hell's Binder that a cheesy sauce makes it extra delicious. I spread it on top of the fish and veg before piling on the mashed spuds - that way the pie doesn't become too dry. Another bonus is you can use any kind of fish - today I managed to get some coley - really cheap, so was able to splash out on a small salmon tail piece and a few prawns - all for a fiver!"

"Lovely recipe - I made it with windfall apples that I scrumped from a field at the back of our house and will take a jar to the Harvest Thanksgiving service on Sunday. As I had some fresh ginger in the fridge, I used that instead of the powder, and realise later that I should have grated rather than chopped it - but we all love ginger and think it tastes great. "
