    Greek lamb with potatoes & olives

    "I made this last week for dinner. Full of flavour as the lamb juice runs down through the vegetables as well. I took the left over vegies from the dish for lunch the next day ... great even without the lamb. The only difference I had was that I couldn't find aubergine (egg plant) so I used courgette (zuchinni). Oh, and the crusty bread is VERY necessary to mop up all that beautiful juice at the bottom of the dish."

    Squash & barley salad with balsamic vinaigrette

    "Made this for the extended family Christmas Day in Australia. Went fantastically with the turkey, chicken and ham. I used roasted capsicum as I didn't have semi-dried tomatoes - worked just as well. I added chopped crispy bacon to the Boxing Day leftovers, which gave it an extra texture and taste. I had requests for the recipe from the family, and this will definitely be in my recipe book from now on. Thanks guys."
