Mexican chilli chicken

"I added less water as suggested, and had to reduce the sauce for longer, but once it had thickened the sauce was delicious. I also froze half and it tasted even better once it had been reheated and I had added more chilli. As I like a real spicy kick, and the sour cream and avocado make the sauce milder."

"I have made this quite a few times now. I usually slice the aubergine and lightly brush with olive oil and pan fry/griddle first as it gives the aubergine more flavour. I also only stir the goats cheese in at the very last min when I have taken the sauce and pasta off of the heat and serve immediately."

"It doesn't give a oven temp so I used gas mark 4. It is also nice with asparagus instead of broccoli. You can also substitute the shallot with finely chopped spring onion, and I added a bit more chilli - delicious!"
