Gingerbread cookies

"I used this recipe to make gingerbread men with my great-granddaughter. It was a good recipe to use with a child but the results were disappointing. They were not sweet enough and I could taste the bicarbonate of soda. Ugh! Should there have been golden syrup or treacle included in the recipe? Maybe Queen Elizabeth 1 did not have a sweet tooth? If I made this again I would use less bicarbonate of soda and add more sugar or some other sweet ingredient. "

"My great-granddaughter Grace is three years old and loved making these gingerbread men. We used raisins and tiny half-moon shaped jellies for eyes and mouth - they seemed to come to life!Tasted good too - we used different sized cutters to make families. A brilliant activity for a rainy day!"

"Try using 110g ricotta and 150ml soured cream instead of butter and horseradish, and adding freshly grated nutmeg and freshly milled black pepper. Garnish with miniature capers, cayenne pepper and watercress. Serve with slices of toasted brioche loaf (still warm). For special occasions."
