Feel-good muffins

"I think you'll find these Muffins are called 'feel good muffins'. In the description it doesn't claim them to be low calorie. These are healthy because although they have high calorie content if you look to the saturated fat....its low which means that the fat content in these muffins are the good ones that give you the energy to function. Things with higher calories are not always bad, the majority of these calories will be from the dried fruit and nuts which all have nutrients packed into them. But if wanting to make them lower in calories just go with peoples posts and substitute or reduce some ingredients. "

"An amazing recipe. Easy and healthy but that doesn't compromise on the flavour. After reading everyone else's comments i left it in for about 16-17 minutes instead of the 12 stated. And i think it came out just right. I wasn't sure what the 'special' frozen vegetables were so just used what i had in the freezer a mix of peas, carrots, broccoli and cauliflower. I also used a gel like vegetable stock, but it was easiest enough just had to make sure i mixed it that little bit more."

"A really good meal. Followed recipe exactly, found although there was a lot of juice it was really quite runny consistency. So might amend that for next time. I used casserole vegetables and added some frozen vegetables too. A really nice and tasty meal. "
