"Used a premade pastry case - naughty but necessary! Omitted hazlenuts, grated a lemon and added 2tbsp of lemon juice, topped off with strawberries and a dusting of icing sugar. Delicious and ready in a fraction of the time for a bday party. Lemon makes it sharp; strawberries keep it sweet...yummy! (Used a 250g mascarpone tub.)"

"What a fab cake! Made it with my 3yr old son to use up over ripening bananas. Moist, very soft and light with a perfectly proportioned chocolate/banana flavour. They didn't rise as much as I thought and while they were cooling, I did consider putting the mixture in one tin next time. However now I've tried it, the slice size was just right. (Although I did have 2!) My son didn't mash the banana very much so pieces were visible, which didn't detract from the flavour, although next time I'll help smoosh them up a bit more so the slices look less like they have poorly combined mixture in them! Topped the cake with icing sugar - looked very pretty. "

"Having made the Strawberry version with great reviews from family and friends, I tried the Lemon recipe to follow a Roast Chicken dinner for guests, (minus the lemon curd). The lemon juice prevented the cream from thickening quite as much as before, but nevertheless, was set in 26 hours. I used Nice biscuits to prevent the lemon flavour being overpowered by biscuit and was pleased by the complimentary coconut flavour. A very versatile recipe and delicious every time!"

"Absolute Vanilla Yumminess! A light and fluffy cheesecake, peppered with vanilla seeds which looks far more delicious than any shop bought comparison. Fresh strawberry compote and huge strawberries really set it off - next time I'll try Morello Cherries! After reading previous comments, I bought extra thick double cream and electric whisked it until firm, before folding into the Mascarpone mixture. It was fully set, on the table and completely devoured in just over 22 hours, from start to finish! I'll make a thicker biscuit base next time, to balance out the smooth cheesecake. "

"Yummy! Made in a very short and stress free time, this is an easy to follow recipe that can be used by children too. I left out the optinal extras and added a little more golden syrup the second time round - just because that's how i like them. This is a keeper -thanks!"
