"When making the ganache I find it better to add the broken up chocolate to the warm cream in the pan instead of pouring the cream onto the chocolate in a separate bowl. This means the cream doesn't get a chance to cool down so the chocolate melts more easily - and makes less washing up! I also added a knob of butter while it's still warm - makes the ganache more glossy."
