"Littleladyjojo, In my experience, especially if you're melting chocolate on it's own, you should always melt it in a pan over hot water - I allow it to boil, then switch off the heat before I put the bowl over the water, that way it never gets too hot. This is particularly true of white chocolate, which can be a nightmare. Take it slowly and you shouldn't have any problems. Also, using a pyrex bowl helps too as it doesn't seem to get so hot. Hope that helps and you're next try is a roaring success!!"

"It sounds like you have the heat up too high - it must be really low, although if you used a double boiler the first time you shouldn't have had too much trouble unless the water was actually boiling or touching the bottom of the bowl. Try putting the butter (it'll help if it's really soft) and syrup in the pan first, then the chocolate on top and melt it all REALLY slowly on the lowest flame possible - it is one of those things you have to be patient with. And timtomtim is right, make sure it's decent chocolate with high cocoa solids. "

"This is a lovely recipe - I added some chocolate chips into the chocolate batter which added another dimension to it. I still found that it was a bit dry though, so will definitely add icing to it next time - thanks for the tip!!!"
