Banana & blueberry muffins

"I was surprised at how well these turned out. Of course they don't taste quite as good as the full-fat version, but they're still yummy and it's a slightly more virtuous treat with my elevenses. I left my bananas in a plastic bag with an apple for a few days to ripen faster (apples emit a lot of ethylene, which makes fruit ripen faster). They were practically liquified by the time I unpeeled them! I was dubious, but they worked perfectly in the recipe. And I took the tip about adding maple syrup for sweetness, which made the difference. "

"One of the easiest recipes I have ever made, but conveniently, also one of the most impressive! I have never had chicken so juicy and flavoursome. My one caveat is that any potatoes that were sitting right next to a lemon wedge were overwhelmingly lemony. Next time, I'm going to leave the lemon wedges nestled up to the chicken instead."

"I have this for breakfast almost every day, and it keeps me going till lunch on a slow steady release of energy. Crunchy and wholesome, with just the right amount of sweetness from the honey and maple syrup, this is so easy to make. If you look at a lot of shop-bought granola, one of the main ingredients is almost invariably large amounts of raw cane sugar, thereby denting any claim to healthy values! I like to vary the ingredients (I'll generally add in some wheat germ and flax seed, which doesn't affect the taste but is a great health boost), and I love adding pecans for the crunch and generally use dried cranberries for their pleasant tartness. "
