"I used pork sausage meat and I found it was great, the meatballs ware so tender and tasty. The sauce I added a red wine reduction instead of sugar and it worked really well."

Salmon and creamcheese puffs

"I made these today and they were great, very easy. I whisked up some fresh cream and used a piping bag to insert the cream in to the puff's, I then made some chocolate sauce, fantastic, will make again. "

"Hi beth I find the best way to get the right temp is temp prob, where 50 is rare 55 mid rare 60 mid and 65 mid/well 70+ welldone.hope this helps."
