"I thought this delicious... I BBQ'ed the aubergines and served it with steak, and it was delicious and fresh despite omitting the garlic as it doesn't agree with me... I 1/2ed the mint and added basil."

Flambéed chicken with asparagus

"Delicious. I made it with skin on drumsticks and thighs and just left them to cook for longer, and also reduced down the liquid a little at the end, with the chicken and asparagus on the side. I heated the brandy in a ladle over a gas flame and ignited it in the ladle (by tipping it a bit until it caught from the gas) then poured over - made it very easy to flambe. Served with rice and steamed carrots. Will definitely do again."

Spinach & three cheese cannelloni

"I made it with Lasagne as I didn't have any cannelloni, and also used less cheese (for calorie reasons), and no garlic (keeps me awake).. and a few other changes according to what was to hand, but we thought it was a delicious spring dish, and much less work than you might think. Tomato sauce a little tart for my taste - will try creme fraiche suggestion next time...."

"I have made this a few times - but always with fresh home roasted red peppers (2 for a 2 people serving). It is best is with added chorizo... and I also add more herbs, usually some thyme and a little rosemary (as they are always available from the garden). I agree that the parmesan is essential!"

"I omitted the kidneys (forgot to buy), replaced 100ml of stock with white wine, and added rosemary. Good flavours, but needed a lot more cooking time - I put a second one made for the freezer back in the oven for a further hour."
