"I halved this recipe as just doing for two, and it served us generously. Was a great one pan dinner, full of flavour. Only change would be to use weaker chicken stock next time, as I was a bit more aware of that flavour than I was expecting. Added some more water too. Will definately do again. "

Wild mushroom, chicken & bacon risotto

"I 'loosely' used this recipe - swapping chicken for left over Christmas turkey - streaky bacon for healthier lean bacon and left out the porcini mushrooms after reading comment about them being gritty - as a result this meal was fabulous- served 5 of us (with 3 'big' kids!) very comfortably. It was really good, and I will definately do again! I have been experimenting with risottos recently and my kids rated this as the best so far!"

Italian rice with chicken

"I doubled this recipe to serve 2 adults and 3 rather large children and still had plenty left over! It was fabulous, and the only change I made was to chop the peppers and onions a bit smaller than wedges, so they weren't too big and off putting for the kids. They all loved it, and it was so easy to clear up after! Definately one to repeat!"

Unbelievably easy mince pies

"I tried leaving my 12 year old to make these - but it took her forever, and she couldn't get the pastry to bind. We added some beaten egg which stuck it together nicely (thanks for the suggestion!), and the pies tasted great - but didn't look like the picture! A bit heavier and more solid! Also tried to fridge some pastry overnight as I do with others, but it went like a brick! "
