"This is a "bendy" recipe:- you can use any good, strong cheese, I used the bits and bobs left in the fridge, including pecorino, and it was fab. I also like to use red onion for colour, and it was a great way to use up the leftovers from a gammon joint - terrific for the day before payday, when the store cupboard comes into its own!"
