"Quick and easy (and very tasty). I have made this twice - first with milk chocolate and today with white chocolate which was lovely. I whipped the double cream first - I think I would be a bit worried about it setting if I added the cream without whipping it first."

Baked Spanish Risotto

"I had a friend coming for tea tonight and couldn't decide what to make so I came onto the GF website and this was one of the first recipes that caught my eye. It sounded interesting (and quick - quite important when you are rushing in from work to cook) and so I made it this evening. It went down very well - everyone (including my 5 year old) asked for seconds. Very quick, easy and tasty. Ideal mid-week family meal but I would also be quite happy to serve it up for when friends come round. I put in some red pepper and defrosted some prawns that I put in right at the end but other than that the recipe was unchanged."

Ultimate chocolate cake

"I made this for my son's birthday on Saturday. Absolutely delicious and quite easy. Very rich so goes quite a long way. I cooked it for exactly 1hr 30 although I think I would check it 10-15 minutes earlier next time. I didn't want to mess about slicing a single cake into layers - I am useless at doing this, they always end up uneven - so I used two 17cm loose bottom cake tins which worked out ok. Would definitely make this again - everyone that tried it (including two four year olds) enjoyed it."

Easy apple fruit cake

"I just fancied a fruit cake the other day but after having already made 5 christmas cakes didn't want anything too taxing. This was great because they are virtually all store cupboard ingredients. Really quick and easy to make. I chucked in some nuts as to my mind you can't have a fruit cake without them! Also, I didn't have sultanas (okay, my store cupboard is a little lacking) so used mixed fruit left over from xmas cakes in place of sultanas and then added raisins as per recipe Also put in a spoonful or two of rum! Lovely result - only slight problem is that my cake is veryquite crumbly and this is a bit of a problem for my husband who likes to slap butter on fruit cake. Don't know if the recipe cake just is crumbly or whether it was one of my amendments that resulted in this. If any one has any suggestions as to why it went like this or confirmation that it is just a crumbly cake I would be grateful. Lovely taste and would definately make it again."
