Veggie shepherd's pie with sweet potato mash

"Really tasty, I simmered it uncovered and ended up with a delicious thick filling. I also used left over carrot and potato mash for the topping. This would be a good way to use up left over vegetables, and I'm sure would be lovely with courgette and mushrooms too. Will definitely make again, a very economical dish that is very filling"

"My 12yr old son makes this regularly , but omits the egg and adds chopped deseeded tomatoes and spring onions. If I'd just put it in front of him, he'd have turned his nose up at it, but, because he helped make it the first time, it is now a firm favourite. We leave off the cheese too, but put plenty of seasoning in the mash."

"Very nice, but better the next day. Would use cream rather than buttercream next time as it was really sweet. Also a tiny bit dense, so will experiment with three eggs next time. Easy one for the littluns to do, too "
