    Chicken casserole with red wine, ham & peppers

    "Lovely recipe. I made it in two parts. I made the recipe to the point of putting it in the oven. I put it in the oven on the timer and cooked it a good 5 hours later and it was fine. I used chicken breasts, added an extra pepper for veg content and reduced the wine by half as it seemed a lot. I made the liquid up with vegetable stock. The casserole seemed quite runny, so I thickened a bit with cornflour and put back on the hob to reduce a bit. I also think shallots or big chunks of onion would work well."

    "I've never made Pea soup before..and was pleasently surprised with the result. I only made it because I was trying to empty the freezer and had a bag of peas left!! I didn't really change anything. I only had dried mint and didn't go mad with it, so the mint was not that strong a flavour in the soup..nice all the same. The second time i made it, iI put a dollop of creme fraiche on the top, which was a nice finishing touch."

    "Made this tonight, was really nice. I altered it a bit by adding some grated carrot and onion as suggested. I also made it into a pasta bake by putting the pasta and sauce into an ovenproof dish, putting some leftover creme fraiche mixed with egg on the top finished with some grated cheese and baking until golden. Was a nice touch, but makes it less 'speedy' i suppose. I halved the pasta content as i prefer a greater sauce pasta ratio!"

    Roasted carrot soup with herb crème fraîche

    "I halved the ingredients (apart from the onion) as I wasn't sure how it would turn out, but i was pleased with the result. I didn't cover the pan when I was simmering the soup, so it did reduce down a bit, so maybe thats where the full amount of stock could come in. I did also simmer the soup for longer as the carrots were still bitey.It did taste nice so maybe the reducing of the stock intensified the flavour. Would definitely make again. Didn't bother with the Creme Fraiche or seasoning. Not really required."

    Darina Allen's winter leek & potato soup

    "I've just made this soup after reading all the good reviews, and i must say i am in agreement. It tastes lovely. When i make it next time i may try without the cream and less butter, just to keep the fat content down..if its not as good i will just revert back to the original recipe. I haven't bothered with the leek topping, as I've run out of leeks. All in all a beautiful soup, just right for this cold weather! It took me a bit longer to prepare, but i wasn't rushing, plus i cooked the veg soup longer before blending as the potatoes were still a bitey!"
