Melty mushroom Wellingtons

"I make these regularly, with large portobelos for special occasions, or just a load of sliced button mushrooms for not-so-special occasions (makes it more of a posh pasty than a Wellington). I love them. They do need a good season as other reviews state. I generally add 2 cloves of garlic and a bit extra stilton as I like strong flavours. You must make sure that you pat the mushrooms dry and really squeeze out the moisture from the spinach though to avoid soggy pastry. They freeze very well."

"This is my favourite soup. Have made it lots of times. I sometimes add extra cheese (depends on the maturity of the stilton) and always put all of the cheese in the soup rather than sprinkling it on top. Just scrumptious with warm crusty bread spread with lots of butter. "

"This is a really easy cake to make and the results are pretty scrummy. Not the best brownies I've ever made (those will be be Nigel Slater's very good chocolate brownies) but a very commendable second best. Will certainly be making again and again."

Pineapple upside-down cake

"Very easy and tasty pud. I used fresh pineapple and substituted milk for the pineapple syrup in the sponge. It took 5 mins longer to cook than in recipe. Wasn't too sweet. Will definitely be making again ... and again."
