Best-ever brownies

"Made these to sell for charity at work and they went down an absolute storm, they really are the best ever! They were just as they should be: slightly crispy and light on the top, gooey and decadantly fudgey inside and gone in seconds! Plus lots of people asking for more, always a good sign!"

Fruity teacake

"I was pleasantly surprised with this one. Made it as a low fat option when taking a few treats into work and it went down a storm. I tried it and liked it, it was definitely moist and sugary thanks to the topping and it was tasty, it had a really good rise and was simple to prepare. I think it was obvious that it wasn't a gooey, buttery load of naughtiness but hey, it does what it says on the tin: a low fat but tasty treat."

The ultimate makeover: Carrot cake

"I've made this one a few times, always with excellent results and compliments to the chef! I've never bothered with the Quark as I find it easier and more cost-effective to just buy 200g of light soft cheese but apart from that, follow the recipe to the t and am always delighted. Definitely doesn't feel like a low fat version, it's light and moist and scrummy."

Baked mincemeat doughnuts

"I've made these a few times, always with brilliant results. I've always managed 12 doughnuts out of the dough, they are small but a good few bites of yumminess and not too much damage on the caloireometer-bonus! I've tried them with mincemeat and with a couple of different types of jam and they always go down a storm. Agree with Nicola on them being a bit messy to secure all the filling inside but always well worth the effort (and the sticky fingers!)"

Sticky stem ginger cake with lemon icing

"I've made this cake a few times now and cannot fault this recipe. It's so deliciously moist and gingery. Definitely only for people who really like ginger but I do, so that's a bonus! It rises beautifully and always earns great responses. Reminds me of the Jamaican ginger cake we used to have as kids but so sooooo much better!"
