    Winter minestrone with pesto croûtes

    "A really tasty winter warmer. I adapted the recipe for what I had in the pantry - leek instead of celery, mini pasta bows instead of the beans, but it came out lovely all the same. Made loads too. Thanks for another lovely, healthy and cheap recipe which is going to be a family favourite!"

    "I also found the sauce a little watery, and flavour a little bland, but maybe I didnt add enough spice as I was serving it up to my kiddies! Will be adding some paprika, veggies and anything else I can find to the left over sauce for a tasy soup....."

    "I cooked this when my Husband and I were both off work with a stinking cold. It was quick and easy, the chilli cleared our noses, and it really perked us up! Dont know if it makes any difference, but I dry-fried the chorizo for a few minutes first, and drained off the fat.... Will definately be having this again - yum!"
