"I've made this loads of times - it's foolproof and just great for midweek. I do add fresh chillies with the onion, and use more paste, but my lot do love hot food!"

Mum's steak and kidney pie

"I wasn't at all sure about this recipe, but it worked really well, as good as any steak and kidney pie I've ever tasted! Followed advice from another contributor, and after making the stew took a ready rolled pack of puff pastry, scored it into 6 portions and baked it separately on a baking tray, then dished up the steak and kidney and topped it with a portion of pastry - so easy - I've now made other pies this way too. It takes pie making into another (much easier!) league."

"We loved this. Forgot to buy the salmon (!) so used three tins of tuna instead, also added a layer of fresh spinach 'cos I had some left in the fridge. Used a bit less broccoli and added some mushrooms, followed suggestions and added parmesan to the sauce plus more anchovies, also used more cheddar on top. It was delicious - not bland at all."

Thai squash & pineapple curry

"Delicious. I was sceptical about not peeling the squash, but bravely went ahead and it was fine - won't ever peel it for a curry or casserole again! Added chicken and used the whole tin of coconut milk and no stock and the consistency was great."

"A great economical mid week curry - added fresh chillies, but didn't change anything else and it tasted really authentic. Definitely a regular from now on."
