    Classic pumpkin pie with pecan & maple cream

    "I had never made or tasted pumpkin pie before so decided to give it a go and it is absolutely gorgeous!! Similar in texture to the little custards we get in bakeries here in NI but with a different flavour obviously. I found this really easy to make (using shop bought pastry) and I could have eaten the whole thing myself!LOL"

    "I made these but used lemon curd instead of jam and left the coconut out. The meringue did take a bit longer to cook but they were very very yummy and everyone loved them."

    "I made these for a girly party I had and they went down a storm, easy to make and look very very impressive!! :D In answer to the egg question, i usually buy medium eggs so I'm assuming I made mine with those."

    "Made this and it was absolutely gorgeous. I didn't use the polenta, I just went for the Self Raising Flour option. I also used lemon curd that was quite solid so I just blobbed in on and swirled it in. There were squidgy bits of lemon curd through the cake when cooked but I enjoyed that. :D I will definately make it again but may try bottled lemon juice this time because I'm now left with three lemons that have been zested to find something to do with!!LOL"

    Christmas pudding with citrus & spice

    "I made this recipe this week and it was absolutely delicious!! If you use a block of butter and make sure it is frozen first then grate it with a cheese grater, it grates just like cheese would. I don't normally like Christmas Pudding, but this one was delicious!! Even if I do say so myself!!LOL"
