Light & fruity Christmas pud

"I made this recipe for Christmas this year and can't rate it highly enough. It was gorgeous! As the title suggests it was light and very fruity, but with all the flavour you would expect to find in a traditional christmas pudding - made in October and matured for Christmas. The added bonus is that none of us had the indegestion problems the mature variety have come to give us as we've become used to a more modern lighter diet. One concern I had with the recipe was the 100ml of Cointreau, as a number of my guests don't drink alcohol, as well as children being part of the party, so I added the juice of an orange and topped up to the required fluid quantity with the Cointreau. The end result was absolutely delicious and much enjoyed by all. It was a great modern update to our families really quite traditional Christmas menu. I'll definitely be remaking next year and I think many more to come."

"I made these last weekend, but as my Husband has colesterol issues I used olive spread (as I do in all of my cooking) instead of butter, and sploshed a bit of vanilla essence in, rather than measuring. With hindsight, I should have added more. My family felt the biscuit part of the cookie lacked flavour, which I attributed to the above, so thought I should pass this finding on to others who also endeavor to make things more healthy. I think more vanilla would have helped though."

The ultimate makeover: Coffee walnut cake

"I haven't made this recipe yet, but to answer Serendippity and Ola's questions... Quark is a low fat, curd type cheese, sold in a tub, I can buy it in my local Sainsburys, it's usually on a high self though. Light Mascarpone is also available in my local sainsburys, it is usually with a selection of other low fat cheeses away from the regular mascarpone."

Raspberry Bakewell cake

"I made this recipe last week with fresh raspberries from my garden. My family all enjoyed the cake, but were disappointed not to taste the ground almonds. I will definitely make this recipe again, but will use almond essence instead of vanilla."

Chinese pork ribs

"We thought boiling the ribs initially sounded unapetizing, but gave it a go. WOW were we impressed. The end result was so tasty that we've now made them a few times for different guests and just for ourselves because they were so yummy. Can't wait to try them on the BBQ as we've only tried them over the Winter so far and so oven baked on a rack! Very easy to do, the kids love preparing them (& eating them). "
