Chicken liver & pineau pâté

"I think it needs more garlic and herbs. Mine didn't turn out very well: it was very dark in colour with a dryish, pasty texture. I must have over-cooked the livers although they were still pink. Anyone know what level of pinkness is safe? If the juices are slightly red still is that ok?"

"A delicious take on smoked salmon and really easy (but impressive!) for entertaining. The vodka gives a great depth to the crème fraiche, rather than making it taste alcoholic. I would reduce the amount of beetroot next time, didn't use all 250g."

"Tasted great but I found them difficult to fry as the mixture was too smooth - more like mashed potato than fish cakes. Any suggestions for getting the texture right?"

"Simple and delicious. I put in just 1 tsp of cinnamon, which was plenty and simmered it for about 20 minutes. Some of the sweet potato chunks broke down and thickened the sauce. A hit!"
