Lightly spiced carrot soup
10 comments
"We made a vatful with home grown carrots for Halloween and it was great. We used up the big, fat carrots and other oddly shaped ones, probably had well over 1kg. I didn't add the orange or ginger (didn't have any) but the curry powder was enough, used one can coconut milk. I added a heaped tbspn to our big pot. Enjoyed by all and will make again. Yes, I have more carrots in the garden. We had enough for 12, plus seconds."

"As everyone has said, this is a lovely recipe. I adjusted it to use a tin of tomatoes and four chicken quarters. Will be making again."

Sticky stem ginger cake with lemon icing

"Made double the recipe yesterday and as I didn't have the right sized tins I baked it in loaf tins. I got one 2lb loaf and three 1lb loaves and baked for barely 50 mins. Two already given away. Tastes delicious. Haven't got round to doing the icing bit, might have eaten the whole thing by then."

"I used this recipe more as an inspiration for what I eventually made as I didn't have fresh apricots (used a tin, drained well) or ground almonds. Instead of the almonds, I grated marzipan over the pastry. Then I dotted some leftover mincemeat and arranged the apricots, sprinkled over demerara sugar (yes, you guessed it, couldn't find the icing sugar). Baked and it turned out really nicely, the pastry needed 25 mins, any less and it would have been raw in the centre. Quick, easy dessert to put together. Maybe next time I'll try the recipe as it was intended. Didn't bother with the maple syrup or cream, it was lovely without."

"I made it with some chili (from a tube) and without the chorizo and it was very good. I happened to have all the ingredients to hand and wanted soup today so it was serendipitous. A big plus, it's healthy as well as tasty! The two don't always go hand in hand in my experience."
