Simmer-&-stir Christmas cake

"This is the BEST. I made this for a family gathering but it only had a week to mature. I fed it with 4 tbsp brandy the day after I made it then simply wrapped it up until needed. It was delicious and received lots of praise from all who tried it."

"Sorry, I forgot to say that I used an organic chicken and fresh herbs."

Easy hot cross buns

"My daughter took this recipe to school and made the buns in her cookery class. They turned out very well though next time she would make 10 or even 12. They were a big hit with everyone in her class, not many came home. We also did not like the flour and water crosses - they are rather chewy but easy to peel off so that was OK!"

Prosciutto-wrapped chicken & leek terrine

"We were very disappointed in this, sorry Gordon! Having poached the chicken according to the instructions it was pretty tasteless. I then had to reduce 3litres of stock to 1litre which took hours, though I must admit it tasted good. I hoped the flavour of the stock would help the finished product. The leeks seemed slimy though I was careful not to overcook them and the layer of raw herbs added a grainy almost gritty texture, yuk! I had planned to make it for a dinner party but, fortunately, did a trial run on the family first. They all gave it a big thumbs down. The pears were good and helped with the flavour."

"I wasn't sure about this but it worked extremely well. It was more filling than I expected, too. Reheated well next day in the microwave and one portion is still in the freezer for testing. A good family supper now on the 'make again' list."
