Roasted pepper sauce for pasta or chicken

"Lovely and works with just about any veg. I sometimes add a small aubergine and a couple of cloves of garlic to the roasting tray, half a chilli or so in the blender also works well or a splash of balsamic at the end. So much better than ready made sauce and so quick to prepare. "

"At which point would this be frozen, before or after baking? I want to serve on boxing day but don't want to cook on Christmas day! Or would it keep if I made it Christmas eve?"
