Barney's roly-poly mince pies

"I thought these were a lovely idea so thought I would give them a pre-christmas test run! I thought they were delicious, although I will take Amybelle's advice and use some greased baking parchment as I did find that they stuck even using a good quality non-stick baking tray. I think the chilling is vital as it firms them up nicely. I have half my batch in the freezer which I am hoping will bake nicely from frozen, any one tried this?"

"I used eating apples and think this is the better option for the sweetness, cooking apples would be a bit tart. They should freeze ok but havnt tried yet, although I do freeze lots of other cakes."

"Thought this was great, really simple and tasty. I made it for the children in little individual pots/ramekins and they loved it. I swapped the sweetcorn for mushrooms and added a little bit of butter to the mash. "

"I wasnt mad on this, I felt it needed a bit longer cooking as my carrots and shallots were a bit under done, or maybe you could brown them in a little oil before they go in the pot. I also think 1 litre of stock is way too much. I halved this amount and still found it too liquid, infact I rested the beef at the end of cooking and boiled up the cooking liquid to reduce it. Slow cooking doesnt reduce cooking liquid infact it seems to create liquid. Other people seem to like this so maybe my old slow cooker is not up to the job, however I do agree that the website needs more slow cooker features."

"I just wondered if there was a mistake in this recipe or was it supposed to be egg free? I made up the mixture without and it looked too dense, so added 1 egg and turned out fine although would almost be tempted to try it with too. Maybe it was intentional and the buttermilk was supposed to moisten and lighten the mixture but if so they need a bit more. I will make again as they turned out well and looking for ways to use up glut of apples!"
