"I wouldn't use this as my benchmark risotto recipie. The established way to begin a risotto is by cooking an onion and garlic in butter/oil for up to 10 minutes. You then add the rice (in this instance it would be the mushrooms at this stage). At the end of the process, stir in some butter and parmaesan for additional flavour and creaminess. Then cover and leave for a couple of minutes for the rice to soak up any excess liquid. Serve!"

"I liked this although next time would fry off the pancetta separately rather than with the veg, as it made the dish too oily and too salty."

"This recipe didn't work at all for me. I went for the baking method and found the food incredibly salty and the onion underdone. It seems that all of the salt from the chorizo had permeated the entire dish and rendered the rest of the food completely unpalatable. Did no-one else have this problem? Also, the onion should have been sauteed before putting it in the oven as it came out half-cooked."

"We hated this version of sauce vierge. Far too stong for a fish like sea bass. Also just gently fried the fish and left out the oven step."
