"Perfect recipe for the larger cake. I marbled mine as it was too strong for children and recommend a mix of milk chocolate and dark or even orange flavour to calm any bitterness. I wouldnt use a high % chocolate for this but 50% - Sainsburys have a value dark chocolate at 35p per bar which is excellent for baking. As for the icing you just pop it in the fridge until you get the correct consistancy then you can use a spatula. You can use any chocolate fudge icing or buttercream and fondant. This is a straight forward sponge cake recipe and any failure is not due to the method or ingredients. "

Simmer-&-stir Christmas cake

"I cant understand what went wrong - twice!!!! The cake just came out stoggy and heavy. I think the moistness of the fruit has to have an effect as I dont usually have a problem with baking. I'm also wondering if the fruit should be well cool to actually setting as after half an hour my fruit mix was still very warm."

"Confused????? I used semolina and its really gritty. Not pleasant at all and a waste of ingredients. Rose well and looked good but not what I was expecting."

"Nice but I think the tinned toms spoilt it. It had that overwhelming tinned tomato taste to it. I think it would work better with fresh toms as a traditional stew would use. The fennel & wine worked well. I wouldnt use cooked prawns tasteless - always raw prawns. Most of these stews contain coucous so next time I'll use one of them."
