"I have made this recipe 7 times now and the method I find is the best is to use a sugar thermometer and cook it till it is just 2 degrees under "soft ball". I have undercooked a couple of batches and these are great for making home made chocolates, roll into small balls and cover with melted dark chocolate. "

Gordon's Christmas pudding

"Because I live in Spain there were certain dried fruits I could not get, so i just used what I could making sure the total weight was correct. I also omitted the marmalade because I had none but the pudding turned out great. I made it into 2 large puddings and for us that is great."

"I made this for presents at Xmas and it went down a storm. I boiled it for about 20 minutes and was the same colour as the photo and there was no problem setting (about 2 hours). I will certainly make again."
